Cheesy middle turkey meatballs

JANUARY generally sees a lot of Turkey mince around. It's also lower in fat than beef mince so great for most people starting a January diet.

This recipe makes 12 meatballs. I'd say it would serve 3 people. Hubby ate 6!

500g Turkey mince
1 egg
2 garlic cloves crushed 
2 tsp chopped parsley
2 tsp mixed italian dried herbs
50g grated Parmesan
1 slice of bread
Salt and pepper to taste
1/2 mozzarella ball

Use a food processor to whiz up the bread into breadcrumbs. Chop the mozzarella into small cubes.


Mix together the mince, egg, garlic, herbs, Parmesan and breadcrumbs, salt and pepper

 
Go on, get stuck in!


Grab a large tablespoon full of mince and roll into a ball. Make a dent in the middle and pop in a cube of mozzarella then bring the rest of the meat up over the cheese and roll so they're ball shape. You can leave these in the fridge for a few hours or overnight if you want to prep ahead. 


When you're ready to cook, preheat the oven to 180c. Heat some oil in a large frying pan and shallow fry the meatballs for 3 minutes on each side until turning golden then pop into the oven to cook through for about 12 minutes. 



I made a tomato sauce of garlic, onion, tinned tomatoes, herbs and tomato purée and served it with pasta.
